HEALTHY OAT COOKIES-VEGAN AND GLUTEN-FREE; NO SUAGR

These cookies are my new favorite! I love the crunchy oats and the chewy inside. The recipe is super simple, you just need 7 ingredients, it's vegan if you use vegan chocolate and gluten-free with gluten-free oats. You don't need any fancy ingredients, we are just going to use a flax egg- that might be new for you. Basically, a flax egg is made out of flax seeds and water, you let that mix sit for 5 minutes until it turns into a gel. This has the same effect as an egg and is often used in vegan baking. RECIPE: Ingredients: 3 tbsp. coconut oil 3 tbsp. agave syrup 3 tbsp. nut butter 6 tbsp. oats 3 tbsp. ground nuts 3 flax eggs (3 tsp. flax seeds and 6 tsp. water) a few drops of apple cider vinegar and a pinch of baking soda OPTIONAL: Chocolate chunks; vanilla extract; any spices Instructions: Preheat your oven to 180°C/356°F. Start by making your flax egg. Mix together the flax seeds and the water and stir. Then let the mixture rest for 5 minutes. In a bowl, combine coconut oil, ...

PUMPKIN PORRIDGE: THE PERFECT HEALTHY BREAKFAST IN FALL

This is the perfect fall breakfast, it's super easy to make, it has a lot of different textures (crunchy hazelnuts, sweet agave syrup, creamy porridge...). And trust me, it's healthy! In my blogpost about the chocolate porridge, I'm talking a lot about the health benefits of porridge, so if you want to check that out- here you go. Pumpkin itself is super yummy and healthy and if you are a bit unsure whether that really tastes good in porridge, try this recipe, it's amazing! I bought my pumpkin puree in a store (it's actually for babies, but who cares?!?), but if you prefer to make your own puree at home- brilliant idea. You just have to chop your pumpkin and let it ferment in boiling water until it's smooth and tender. Then blend it until you reach the preferred consistency. And when we're all done with prepping-we can jump right into the cooking process. RECIPE: Ingredients: 1/3 cup oats (35g) 1/4 cup pumpkin puree (61g) a pinch of cinnamon, cloves, and sa...

VEGAN CHOCOLATE PORRIDGE MUFFINS: super delicious and easy chocolately recipe

Are you a REAL porridge lover?? I think I'm kind of addicted to warm chocolate porridge, especially in these cold autumn months. SO, I thought: Why not create muffins that taste like porridge? They have such a cool consistency, and of course a nice chocolate flavor. These vegan muffins are also made with oats and buckwheat flour, so they are healthy as well! Before we can actually start- I want to introduce you to the "vegan baking world". Especially for beginners, these notes could be quite helpful. Flax eggs: because we need to replace the normal eggs in the muffins, we use flax eggs. You basically just mix 1 tbsp. grounded flax seeds and 1 tbsp. hot water in a bowl and wait a few minutes. It will turn into a glibbery paste ( it is a little bit like chia pudding) with which you can easily work. This has the same effect as eggs-so the muffins will rise and get fluffy. Oats and spelt-buckwheat flour: I mix the oats before I put them into my recipe. But I like to not mix...

Healthy Banana Cake (Bowl Recipe) : healthy, vegan and with included video

This recipe was first shown in my IGTV video on Instagram. But there was no 'real' recipe, so here it is. The banana cake is made for a small bowl ( 10 cm or 3,9 inches). It isn't vegan but healthy- no butter or sugar. For all of you who prefer an even sweeter variation, you can add some coconut sugar if you want. But in fact, the overripe banana is sweet enough. I haven't made the cake in the microwave yet but you can try it if you want. I bake it in the oven for about 10-15 minutes.  So let's start with the easiest and most delicious banana cake!   Recipe: Ingredients: 1 egg 1 pinch salt 1 mashed overripe banana 1 tbsp. melted coconut oil 1 tbsp. Apple cider vinegar 1 tbsp. ground almonds Vanilla extract 4 tbsp. flour  1 tbsp. chopped dark chocolate  Instructions: Separate the egg and beat the egg white with the pinch of salt until stiff. In another bowl, mix the mashed banana, together with egg yolk, apple cider vinegar, coconut oil, and vanilla extract. (If you ...

CHOCOLATE-ALMOND PORRIDGE: healthy breakfast idea

Creamy Porridge to start the day... Chocolate flavor to create the "dessert illusion", topped with fresh blueberries and a light almond taste make this healthy Porridge a real DREAM! So let's st art  with a  quick "Porridge-Guide" to help you optimize your Porridge-Skills! What are the basic ingredients for the perfect Porridge? Oats: we don't have to talk about that, I think. Use "normal" quick oats and that's it! Milk: you can, of course, use normal milk, but for this recipe, it's best to use almond milk to give the almond flavor we want. Banana:  I love using overripe bananas in my Porridge because it gives a natural sweetness. The banana also increases the thick and creamy consistency, so make sure to use it! Chia Seeds:  I started using chia seeds a couple weeks ago and it's amazing. The chia seeds thicken the porridge and create an almost pudding-like consistency which I really enjoy! The effect is typical, easy, and helpful in ot...
