HEALTHY OAT COOKIES-VEGAN AND GLUTEN-FREE; NO SUAGR

These cookies are my new favorite! I love the crunchy oats and the chewy inside. The recipe is super simple, you just need 7 ingredients, it's vegan if you use vegan chocolate and gluten-free with gluten-free oats. You don't need any fancy ingredients, we are just going to use a flax egg- that might be new for you.

Basically, a flax egg is made out of flax seeds and water, you let that mix sit for 5 minutes until it turns into a gel. This has the same effect as an egg and is often used in vegan baking.




RECIPE:

Ingredients:

  • 3 tbsp. coconut oil
  • 3 tbsp. agave syrup
  • 3 tbsp. nut butter
  • 6 tbsp. oats
  • 3 tbsp. ground nuts
  • 3 flax eggs (3 tsp. flax seeds and 6 tsp. water)
  • a few drops of apple cider vinegar and a pinch of baking soda
  • OPTIONAL: Chocolate chunks; vanilla extract; any spices
Instructions:

  1. Preheat your oven to 180°C/356°F.
  2. Start by making your flax egg. Mix together the flax seeds and the water and stir. Then let the mixture rest for 5 minutes.
  3. In a bowl, combine coconut oil, nut butter, agave syrup, and ACV.
  4. Add the ground almonds, oats, and baking soda. Then stir everything together and place the batter on a parchment paper-covered baking sheet, using a teaspoon.
  5. Sprinkel your cookies with chocolate.
  6. Bake them for 15-20 minutes until golden brown.
  7. Enjoy!
