This recipe was first shown in my IGTV video on Instagram. But there was no 'real' recipe, so here it is. The banana cake is made for a small bowl ( 10 cm or 3,9 inches). It isn't vegan but healthy- no butter or sugar. For all of you who prefer an even sweeter variation, you can add some coconut sugar if you want. But in fact, the overripe banana is sweet enough. I haven't made the cake in the microwave yet but you can try it if you want. I bake it in the oven for about 10-15 minutes.
So let's start with the easiest and most delicious banana cake!
Recipe:
Ingredients:
- 1 egg
- 1 pinch salt
- 1 mashed overripe banana
- 1 tbsp. melted coconut oil
- 1 tbsp. Apple cider vinegar
- 1 tbsp. ground almonds
- Vanilla extract
- 4 tbsp. flour
- 1 tbsp. chopped dark chocolate
Instructions:
- Separate the egg and beat the egg white with the pinch of salt until stiff.
- In another bowl, mix the mashed banana, together with egg yolk, apple cider vinegar, coconut oil, and vanilla extract. (If you want also some coconut sugar or other things to sweeten)
- Add the flour, ground almonds, and chopped chocolate.
- At least, stir in the stiff egg white.
- Top the cake with dark chocolate chunks and bake at 180°C/356°F for about 10-15 (or try it in the microwave).
