Easy cake with cherries and curd cheese

This cake is super simple to make, requires only a few essential ingredients, and tastes delicious! The cherries add a nice fruity touch, and the pink glaze looks great and creates a sugary finish to this cake. 

You can easily swap out the cherries for other fruits like blueberries or sliced apricots.

So let's get started!


Recipe:

Ingredients: 

  • 125g soft butter
  • 200g sugar
  • 2 eggs
  • 250g curd cheese
  • 300g flour
  • 2 tsp baking powder
  • as many cherries as you desire ( I am using cherries out of a jar but fresh ones do work as well)
  • optional: vanilla extract
Instructions:

  1. Start by preheating your oven to 175°C/347°F. 
  2. In a bowl, whisk together butter, sugar, and vanilla extract until fluffy.
  3. Slowly start adding one egg at a time and whisk until fully incorporated.
  4. Next, add the curd cheese.
  5. Lastly, mix flour and baking powder, before you add it to your wet ingredients.
  6. Add your cherries, if you want, dust them in flour before adding them- this way they do not sink all the way to the bottom of the cake but spread evenly.
  7. Bake your cake for about 50 minutes in the preheated oven, using a square baking tin.
  8. After the cake has cooled down, make a glaze out of cherry juice and powdered sugar.
  9. Decorate the cake to your liking and enjoy!

Raspberry Apricot Cake

The perfect cake for summer is soft, fluffy and has lots of fruits in it - at least, that is my opinion. I love topping it with vanilla whipped cream and serve it with an iced coffee.  Now, if you would like to enjoy a cake like that - I would suggest you try this raspberry apricot cake. It's easy to make ( another one-bowl recipe, yay!), fluffy and soft, and involves the fresh flavors of raspberries and apricots. I top it with some brown sugar to make it even more delicious. Because I am using an 18 cm / 7" pan, this cake bakes a long time in the oven. So, if you do not want to wait that long (which I can totally understand..) I would suggest using a larger pan. Himbeer-Aprikosen Kuchen

Der perfekte Sommerkuchen ist weich, fluffig und enthält viele Früchte -das ist zumindest meine Meinung. Ich liebe es, ihn mit Vanille-Schlagsahne zu essen, oder mit einem Eiskaffee zu servieren.  Wenn du auch so einen Kuchen genießen möchtest, empfehle ich dir diesen Himbeer-Aprikosenkuchen. Er ist einfach zuzubereiten (noch ein One-Bowl Rezept, juhu!), fluffig und weich, und er enthält die sommerlichen Aromen von Himbeeren und Aprikosen. Ich streue gerne etwas braunen Zucker über die Aprikosen, um ihn noch leckerer zu machen. Da ich eine 18 cm Backform verwende, muss dieser Kuchen sehr lange im Ofen backen. Wenn du also nicht so lange warten willst,(was ich absolut verstehen kann...), würde ich eine größere Form empfehlen. Dadurch verliert den Kuchen zwar an Höhen, braucht aber weniger Zeit zum Backen.
