I love this super easy recipe and I and my family ate it in just 1 day. The cake consists of fluffy chocolate dough, banana slices, and chocolate whipped cream. But you can, of course, replace the bananas with other fruits like blueberries, cherries, or plums. The chocolate dough is a recipe from sallyswelt, a german food blogger. I substituted a few ingredients and translated the recipe into English for you, but if anybody wants to have a look at the original recipe, I'll link it here.
So let's start with the recipe!
RECIPE:
Ingredients:
- For the dough:
- 2 eggs
- 100g sugar
- 100g milk
- 100g vegetable oil
- 125g flour
- 25g cocoa powder (unsweetened)
- optional: baking powder, vanilla extract, salt
- For the cream
- 200g heavy cream
- 1 1/2 tbsp. cocoa powder (unsweetened)
- 2 tbsp. powdered sugar
- 2 bananas
Instructions:
- Preheat your oven to 170°C/338°F.
- We start with the dough. Beat the eggs and sugar (optional vanilla extract) for 3-4 minutes until creamy.
- Add oil and heavy cream and stir until incorporated.
- Sift in flour, cocoa powder, and if you want 1 tsp. of baking powder to let the dough rise a little more.
- Spread the batter on a baking sheet, lined with parchment paper. It's not super important, that the dough forms a square.
- Let the dough bake for 20 minutes and cool completely.
- Cut your bananas into thin slices. You could sprinkle them with lemon juice to prevent them from turning brown.
- Cut the chocolate dough into a square and place the banana slices on top.
- For the frosting, beat the cream with cocoa powder and powdered sugar until stiff, and add the finished cream on top of your cake.
- Sprinkle with chocolate sprinkles and enjoy!
