QUICK CINNAMON ROLLS WITHOUT YEAST

If you are a Cinnamon Lover who wants to enjoy their cinnamon rolls as quickly as possible or you are a beginner who doesn't like making yeast dough- this recipe is for you! It only contains 10 ingredients and to make the rolls puff and fluffy, I used a Scone dough as a base. The only thing you have to keep in mind while making it is to keep all the ingredients cold. Cold milk, cold butter and you're good to go.

So let's get started!



RECIPE:

Ingredients:

  • 125g flour
  • 1 pinch of salt
  • 1/2 tsp. baking soda and baking powder
  • 30g sugar
  • 15g butter melted +15g butter cold
  • 75g cold milk
  • sugar and cinnamon
Instructions:

  1. Grab a bowl and mix together flour, salt, baking powder, baking soda, and sugar.
  2. Add the cold butter in little pieces and rub it between your fingers until there are no more big butter clumps and the dough looks a little bit like a crumble.
  3. Now, add the cold milk and knead everything until you get a smooth dough. It can be a bit sticky, so feel free to add more flour if you need it.
  4. Cover the bowl with some plastic wrap and put it in the fridge for 15 minutes to cool.
  5. In the meantime, mix some sugar with as much cinnamon as you want and make sure your butter is melted (15g). Also preheat the oven to 200°C/392°F.
  6. Roll out your dough until it is about 0.3-0.5 cm thick and brush it with the melted butter. Sprinkle the cinnamon-sugar on top and roll the dough up, like you would do with a Swiss Roll.
  7. With a sharp knife or a thread, cut the roll into 8-10 cinnamon rolls.
  8. Put them into the preheated oven and bake for 20 minutes. If you want, you can brush them with milk, heavy cream, or butter during the baking process.
  9. Enjoy!
