GESUNDE HAFERFOLCKEN KEKSE-VEGAN; GLUTENFREI UND OHNE ZUCKER

Diese Kekse sind mein neuer Favorit! Ich liebe die knusprigen Haferflocken und das weiche Innere. Das Rezept ist super einfach, Sie brauchen nur 7 Zutaten, es ist vegan, wenn Sie vegane Schokolade verwenden und glutenfrei mit glutenfreien Haferflocken. Sie brauchen keine ausgefallenen Zutaten, wir werden nur ein Leinsamen-Ei verwenden - das ist vielleicht neu für Sie.


Im Grunde genommen wird ein Leinsamen-Ei aus Leinsamen und Wasser hergestellt, das man 5 Minuten lang stehen lässt, bis es sich in ein Gel verwandelt. Das hat die gleiche Wirkung wie ein Ei und wird oft beim veganen Backen verwendet.







REZEPT:


Zutaten:


  • 3 Esslöffel Kokosnussöl
  • 3 Esslöffel Agavendicksaft
  • 3 Esslöffel Nussbutter
  • 6 Esslöffel Haferflocken
  • 3 Esslöffel gemahlene Nüsse
  • 3 Leinsamen-Eier (3 EL Leinsamen und 6 EL Wasser)
  • ein paar Tropfen Apfelessig und eine Prise Backpulver
  • OPTIONAL: Schokoladenstückchen; Vanilleextrakt; beliebige Gewürze

Zubereitung:


  1. Heizen Sie den Ofen auf 180°C vor.
  2. Beginnen Sie mit der Herstellung des Leinsamen-Eis. Mischen Sie die Leinsamen und das Wasser und rühren Sie um. Lassen Sie die Mischung dann 5 Minuten lang ruhen.
  3. Vermengen Sie in einer Schüssel Kokosnussöl, Nussbutter, Agavendicksaft und Apfelessig.
  4. Fügen Sie die gemahlenen Mandeln, Haferflocken und das Backpulver hinzu. Rühren Sie dann alles zusammen und geben Sie mit einem Teelöffel Keksteig auf ein mit Backpapier belegtes Backblech.
  5. Bestreuen Sie die Kekse mit Schokolade.
  6. Backen Sie sie für 15-20 Minuten, bis sie goldbraun sind.
  7. Genießen!
