CHOCOLATE PLUM TARTE

 This Tarte is perfect for fall: we are making a crunchy dough with ground nuts, creamy chocolate whipped ganache, and top our Tarte with plums. I also created a rose pattern to make it even prettier! If you haven't make whipped ganache before, I will explain it to you before we jump to the recipe.

Ganache is a cream based on chocolate and cream. This makes it melt in your mouth and -gosh- it's so incredibly creamy! For a whipped ganache you just beat your ganache up until it's light and fluffy so you can easily fill it into your Tarte dough.

So let's get started!



 RECIPE:

For the Tarte dough: 

Ingredients:

  • 2 1/2 cups flour ( 400g)
  • 1 cup sugar (200g)
  • 1 cup butter (225g)
  • 1 cup ground almonds (100g)
  • Vanilla extract
  • 2 eggs
  1. Start by mixing butter and sugar until combined
  2. Add the eggs, and flour, ground almonds, and vanilla
  3. Knead until you get a well-combined dough
  4. Put your dough into the fridge for 30 minutes
For the whipped ganache filling:

Ingredients:
  • 1 cup/ 6 ounces dark chocolate (150g)
  • 1/2 cup whipping cream (119g)
  1. Chop the chocolate into small pieces and put them into a bowl.
  2. Heat your whipping cream until you can see little bubbles and pour it over your chocolate chunks
  3. Stir until the chocolate is melted completely.
  4. Put your ganache into the fridge and stir every 10 minutes until you reach a thickened consistency (like Nutella) 
  5. With a hand mixer, mix start beating your ganache until it gets lighter in color and fluffier. 
Final steps:

Ingredients:
  • 5-6 plums
  1. Fill your Tarte dough with the ganache
  2. Wash the plums, then remove the center and cut them into very thin slices. Half them, so you get a half circle
  3. Start by putting some plums in the middle of your Tarte, then put the rest very close to each other until the whole Tarte is decorated with plums. The pattern should look like a rose (you can see it in the picture below).

Raspberry Apricot Cake

The perfect cake for summer is soft, fluffy and has lots of fruits in it - at least, that is my opinion. I love topping it with vanilla whipped cream and serve it with an iced coffee.  Now, if you would like to enjoy a cake like that - I would suggest you try this raspberry apricot cake. It's easy to make ( another one-bowl recipe, yay!), fluffy and soft, and involves the fresh flavors of raspberries and apricots. I top it with some brown sugar to make it even more delicious. Because I am using an 18 cm / 7" pan, this cake bakes a long time in the oven. So, if you do not want to wait that long (which I can totally understand..) I would suggest using a larger pan. Himbeer-Aprikosen Kuchen

Der perfekte Sommerkuchen ist weich, fluffig und enthĂ€lt viele FrĂŒchte -das ist zumindest meine Meinung. Ich liebe es, ihn mit Vanille-Schlagsahne zu essen, oder mit einem Eiskaffee zu servieren.  Wenn du auch so einen Kuchen genießen möchtest, empfehle ich dir diesen Himbeer-Aprikosenkuchen. Er ist einfach zuzubereiten (noch ein One-Bowl Rezept, juhu!), fluffig und weich, und er enthĂ€lt die sommerlichen Aromen von Himbeeren und Aprikosen. Ich streue gerne etwas braunen Zucker ĂŒber die Aprikosen, um ihn noch leckerer zu machen. Da ich eine 18 cm Backform verwende, muss dieser Kuchen sehr lange im Ofen backen. Wenn du also nicht so lange warten willst,(was ich absolut verstehen kann...), wĂŒrde ich eine grĂ¶ĂŸere Form empfehlen.
