SWEET OMELETS WITH PLUMS: easy treat for Sundays with the family

Fluffy dough, heavy cream, fresh plums, and chocolate - this dream can come true with this recipe. It's easy, quick, and perfect for tea-time with friends and family. 
Because this recipe is so easy, I just have one tip for you: beat the eggs, water, sugar, vanilla, and salt veeeery foamy - at least 5 min. This is very important for the fluffy consistency of the sponge dough. Without further do...

Recipe

Ingredients:
  • 4 eggs
  • 4 tsp. hot water
  • 1 tbsp. vanilla extract
  • 1/2 cup sugar (120g)
  • 2/3 cup - 1 tbsp. flour (75g)
  • 2/3 cup - 1 tbsp. corn starch (75g)
  • 2 tsp. baking powder
  • 1/2 cup heavy cream ( 100g)
  • 2 fresh plums
  • (dark chocolate)

  1. Beat eggs, hot water, sugar, and vanilla extract for at least 5 min. until foamy, creamy, and with a light yellow color.
  2. Mix flour, corn starch, and baking powder in a separate bowl.
  3. Sift the flour mixture over the egg mixture and fold in quickly.
  4. With a tablespoon, place dough on your parchment paper and form circles with the dough, the circles should be around 14 cm diameter ( 5,5 inch) each. 
  5. Bake them at 170°C/338°F for 5-8 min. until they are still yellow and not brown, otherwise they'll crack afterward!
  6. Pull your "omelets" of the parchment paper and fold one half on the other to get the typical omelet shape/ taco shape. Place a teaspoon in between to keep them open and let the omelets cool completely.
  7.  Beat the heavy cream, chop the chocolate and the plums in little chunks, then fill the omelets with the heavy cream and the plums and decorate with the chocolate.

Easy gluten free mini gugelhupf with Mill&Folks

I recently came up with the idea to make an advent wreath out of 4 mini Gugelhupf. Each of them should carry a candle, taste good, and look pretty. And then I partnered up with mill&folks, a US-based brand that produces gluten-free flour mixes, noodles, and much more.
